I remember when I first learned this, it changed how I thought about design, and I think really reinforced the value of subtlety in design. Humans perceive things in a lot more fidelity then we consciously think they do.

You can use black if you really want to, and if it works well with what you're trying to communicate. You can't find a lot of things in nature (and even colors like blue for that matter) — doesn't mean they're off limits.
